Cheesy Southwestern Meatloaf


This was super easy to put together and delicious! My husband declared it one of his favorite meatloaf recipes ever! We are trying to get away from processed ingredients, but as Texans, Velveeta is a hard habit to break. Definitely give this a try if you love Velveeta as much as we do.

Cheesy Southwestern Meatloaf

Serves 6

1.5 lb ground beef
3 slices of wheat bread torn into small pieces (I used Sara Lee Delightful to lower the carb count)
1 egg, lightly beaten
1 can mild Rotel Diced Tomatoes and Green Chilis, drained
1/2 lb of Velveeta
1/4 cup of chopped peppers (I used tri color, but green works great)
2 tsp of chili powder

Preheat oven to 375. Mix all ingredients by hand and shape into 9x5 loaf pan. Cook 1 hour or until cooked through, let stand 5 minutes before serving.

Approximately 307 calories, 10 grams of carbs per serving
